Crafters Guild is a Towny server where you can join a town, start your own, and work your way up to mayor if you want to lead the place yourself. It also has McMMO, so your skills actually level up RPG-style as you play, plus an economy system where you can make money by fighting mobs, mining ores, and selling items.
For protection and quality of life, you can lock chests, doors, signs, and dispensers with LWC protections, and everyone gets access to backpacks for extra storage that can be upgraded. There is also a mob arena mode for teaming up with friends and fighting waves together.
